Upside Down Mulled Pear Tart

1 Cinnamon
1 Vanilla pod
6 Pears; peeled and halved
4 Star anise
500 ml Red wine
125 g Sugar
Puff pastry
250 g Sugar
250 ml Water
60 g Butter

Original recipe makes 1 servings



Bring all the ingredients for the mulled wine together and boil. Add the pears, cover with greaseproof paper and simmer until cooked. In a cast iron pan melt the butter, add the sugar and caramelise.
