great pizza recipe, need case iron skillet
1. place an oven rack on the bottom rung of the oven. preheat the oven to 450 degrees
2. spray a 12-inch cast-iron skillet with non-stick spray and set over medium heat. add the peppers, onion, and garlic and cook, stirring occasionally, until tender, 5 minutes. remove from the heat and sprinkle the mozzarella.
3. sprinkle work surface lightly with flour. turn the pizza dough onto the surface; with a lightly floured rolling pin, roll into a 12-inch circle. Place the dough in the skillet, cpovering the vegetable mixture. Prick the dough in several places with a fork and lightly spray with nonstick spray.
4. bake on the bottom rack of the oven until the crust is golden, 20 minutes. to loosen, run a thin knife around the side of the skillet. invert the pizza onto a serving plate. sprinkle with the parmesan cheese and cut into 6 wedges.
