Meat should be well browned.
Saute meat in very hot oil and brown on both sides. Add mushrooms and onion, season with salt and pepper and saute. Add wine and cream, blend in butter combined with flour. Bring to boil and remove from heat once sauce has thickened.
Can velvet veal beforehand.
