Shop your local farmer's market for the best tomatoes you can find, fresh artisan bread, and be sure to use the best fresh basil and quality olive oil. You could try using another gourmet oil for this vegan bruschetta as well. Perhaps avocado oil or macadamia nut oil, if you happen to have some.
Over medium heat, heat the garlic in olive oil for 2 to 3 minutes. Add tomatoes and allow to cook for another 5 to 7 minutes.
Brush both sides of bread with olive oil and sprinkle generously with sea salt. Place bread slices on baking sheet, and top each slice with about 1 tablespoon of tomato and garlic mixture.
Broil for 2 to 3 minutes.
