Heat vegetable oil in a large saucepan over medium heat. Slowly cook and stir onions until softened. Mix in spinach, garlic, green onions and dill. Cook until the spinach is wilted, about 3-5 minutes.
Remove from heat. Let cool, then squeeze as much water out of the mixture as possible (You can do this by transferring the spinach mixture to a mesh sieve and pressing out the water).
Cut the tofu into cubes and place on a clean towel. Squeeze as much water out of the tofu as possible. Place in a mixing bowl and coarsely mash the tofu, adding the nutritional yeast, olive oil, lemon juice, and vinegar. Add the spinach to the tofu mixture, add spices, stir well, taste and adjust spices.
Generously coat a 9x13” baking dish with olive oil and lay one sheet of phyllo dough on top. Coat the first phyllo sheet with olive oil (you can use a pastry brush), including the edges of the pan. Repeat this, layering sheets of phyllo dough until you get about 1 inch thick. Then spread out the spinach and tofu mixture generously. Top with another 1-inch layer of oiled phyllo sheets or until you run out of phyllo.
Bake in the preheated oven until golden brown, 45 minutes to 1 hour. Then cut it into squares and serve!
