Good for entrees
Pre heat oven to 160 degree. Line a baking tray with baking paper
Arrange tomatoes, cut side up on tray.Roast for 8 - 10 minutes.Set aside.
Combine every thing , except eggs. Add egg, stir to combine.
Heat the oil in a large frying pan over medium heat Add 1 heaped tablespoon
of vegetable mixture. Using a spatula, flatten slightly. Repeat to make 8 fritters.
Cook for 2 minutes each side or until golden and cooked through. Transfer to a plate
lined with paper towel.Repeat with mixture to make 24 fritters. Cool slightly.
Add 1 teaspoon of mayonnaise, top with tomatoes.
