I do lots of different veg soups with what ever is to hand, this one was especially nice. They are very healthy as just vegetables, herds, spices and water. I need to investigate a little more about adding richness with flour or cream but they taste pretty good and low on calories.
Fry onion, then garlic and chille
add carrot pack, stir then add hot water and stock cube. Season and add Garam Masala.
After 5 mins add sweet potato and baking potato
after 5 mins add leek pack, add more water if necessary
after 5 mins add lettuce - I tried this as it was hanging around and about to be thrown out - seemed to work well.
Season to taste and don't cook too long. Best next day when flavours matured.
Make enough to freeze several portions.
