I developed this recipe for my mother who loves sausage rolls but doesn' t eat meat anymore. While I usually use pie pastry that I make, you may certainly buy pastry or use puff pastry.


Ingredients

1 cup Carrot; diced
1 cup Zucchini; cubed
1/2 large Onion; chopped
3 Garlic
1 large Potato; cooked and chopped
1 cup Bread crumbs
1/2 cup Rolled barley
3 large Eggs
1/2 teaspoon Salt
1 teaspoon Worcestershire Sauce
1 teaspoon Oregano
1/2 teaspoon Basil
1/2 teaspoon Black pepper
3/4 teaspoon Cayenne
1/2 teaspoon Curry powder

Preparation

Put garlic cloves into food processer. Run till finely chopped. Add carrot and pulse. Add remaining ingredients and pulse till blended and fine.

Use puff pastry or your favorite pie dough. Bake at 375 for 40 minutes.

** Rolled oats may be substituted for rolled barley. Use regular kind, not quick cooking.

NOTE: Filling expands. Don't overfill your dough.

To think I would never taste a sausage roll again? I made this last night and it was delicious. Moist, full of flavour and easy to make. This has great building blocks that depending on your tastes can add a dash here and there to make your own. Or it would still taste great as is. I only changed it slightly adding a little more of the herbs and fresh chilli cause I like spicy things. I also caramelised the onion and garlic before blending. But that's it. Cheers for the recipe. I may even add haloumi or fetta cheese on the top of the mixture before I wrap them. Mmmmm.
