found this online, just wanted to store it so that I could try it out when I have the time. It got really good ratings
1)Cut tops off peppers and remove seeds
2)In a large bowl, combine the rice, tomatoes, corn, onion and beans. Stir in the Monterey Jack cheese, olives, basil, garlic, salt and pepper.
3)Spoon mix into peppers.
4)Combine spaghetti sauce and water
5)Pour half into a ceramic pot, add the stuffed peppers.
6)Top with remaining sauce.
7)Sprinkle with Parmesan cheese.
8)Cover and bake in oven at 400 degrees for 30 minutes
