Cook and stir chicken in large skillet sprayed with cooking spray on medium-high heat 5 minutes or until no longer pink.
Stir in water. Bring to boil. Add pasta; stir. Cover; simmer on medium-low heat 10 minutes or until pasta is tender.
Add remaining ingredients; stir. Cook, covered, 5-7 minutes or until velveeta is completely melted and vegetables are crisp-tender, stirring frequently.
kyjonesie 1y agoNeeded a quick, easy and filling meal to make for my family on the go! Everyone loved it! I did add about 2Tbl of butter when I got to adding the cheese and rotel. Also after about 4-5mins of the pasta cooking in boiling water, I added the frozen veggies and then drained them. Lastly, I used canned chicken to make it quicker.
