1 pound ground beef
1 red bell pepper; chopped
1 pkg taco seasoning
1/2 cup water
4 cups hash Browns; frozen, southern style
10 oz Corn; frozen
8 oz velveeta; cut into 1/2" cubes

Original recipe makes 6 Servings



HEAT oven to 350┬░F.

BROWN meat with peppers and onions in large skillet; drain. Return to skillet.

STIR in taco mix and water. Add potatoes, corn and VELVEETA; mix well. Spoon into 13x9-inch baking dish; cover.

BAKE 20 min.; stir. Bake, uncovered, 15 min. or until heated through.

This recipe was alright, but not good enough to be a meal on its own. As weird as it might sound... I think adding some salsa and using it as a dipping sauce might be better!

Good base recipe to make your own. I omitted the red pepper, added garlic to the beef/onion, and added a can of mild Rotel with the juice (I used only about 1/4c water).

Very good super quick meal! The family loved it! I did tweek it a bit... I doubled the meat, cheese, and corn. I also added 1 cup of picante sauce to the mix ....thanks for sharing
