Suggest a better descriptionWarm cream and butter in small saucepan over medium heat; set aside.
Put potatoes in medium saucepan with cold water to cover. Bring to a boil, then add 1 tsp. of salt. Reduce heat and simmer for 15-20 minutes until potatoes are tender. Drain.
Mash potatoes or pass through ricer into large mixing bowl.
Stir in warm cream and butter until cream is absorbed and mixture is smooth. Season with salt and pepper and finish by stirring in 1/4 cup of olive oil or butter.
