A nice spicy sauce for fish or pasta.

"Had seen another recipe with raisins in it & tried it , but lost the recipe. This one is very close & will DEFINITELY use this one plus the raisins again. Have had it with fish & chicken."

Ingredients

1 teaspoon olive oil
1 cup Onions; sliced
1 teaspoon Garlic; minced
1/2 cup Celery; diced
1/2 cup Green bell pepper; sliced
1/2 cup Red bell pepper; sliced
1/2 teaspoon Jalapeno peppers; or serrano pepper, diced
1/4 teaspoon Thyme
1 ea Bay leaf
1 pinch Cayenne; or red chili flakes
1/4 cup Cilantro; fresh minced
1/2 cup Tomato; diced with juice
1/3 cup Ripe olives; sliced
1 1/2 cup Chicken Stock
Salt; to taste
Pepper; to taste

Preparation

Heat olive oil in a sauce pan over medium heat. Add onions, garlic, celery, and peppers, saute for 3 - 4 minutes. Add thyme, bay leaf, red chili flakes, cilantro, tomatoes and olives. Continue to saute for 3 minutes. Add chicken stock and bring to a simmer. Reduce heat and simmer over low heat for 20 - 25 minutes, stirring occasionally, Season with salt and pepper.
