Ready in 45 minutes
A nice spicy sauce for fish or pasta.
"Had seen another recipe with raisins in it & tried it , but lost the recipe. This one is very close & will DEFINITELY use this one plus the raisins again. Have had it with fish & chicken."
Heat olive oil in a sauce pan over medium heat. Add onions, garlic, celery, and peppers, saute for 3 - 4 minutes. Add thyme, bay leaf, red chili flakes, cilantro, tomatoes and olives. Continue to saute for 3 minutes. Add chicken stock and bring to a simmer. Reduce heat and simmer over low heat for 20 - 25 minutes, stirring occasionally, Season with salt and pepper.
