Suggest a better description1. In a large microwave-safe bowl, combine the water & bulgur. Microwave on 100% power (HIGH) for 1 minute. Do not drain. Cool the mixture slightly.
2. Stir the egg, your desired seasoning, salt & pepper into the bulgur mixture. Add the ground turkey or beef, mixing well.
3. Shape the mixture into 24 meatballs.
4. Place the meatballs in a microwave-safe 2 quart square baking dish. Cover with vented plastic wrap. Microwave on 100% power (HIGH) for 4 minutes, rearranging the meatballs once. Drain off the excess liquid.
5. Pour the undrained stewed tomatoes over the meatballs. Cover with vented plastic wrap. Microwave on 100% power (HIGH) for 1 to 3 minutes more or until the meatballs are no longer pink in the centers (165ºF).* (* see Test Kitchen Tip below.)
6. If desired, serve the meatballs over the spaghetti squash. Sprinkle with basil, cilantro, or green onion.
