A delicious and refreshing summer snack. These can make up a meal when combined with another app like chicken satay or grilled shrimps.
1. Soak noodles in hot water and cover, ~30 minutes. Snip into 4" lengths and drain.
2. Combine carrot, noodles, bean sprouts, cabbage, scallions, herbs and sugar. Toss with garlic, chiles and and lime juice.
3. Form rolls. Wet each wrapper for 30 seconds-1 minute until pliable. Place 1/3 cup vegetable filling into the middle of the roll. Roll up like a burrito and place seam side down on the platter. Allow to sit a few minutes to allow to seal.
4. Meanwhile, mix up dipping sauces. Enjoy!
