This is my paternal Aunt Virgina's version of Toll House cookies. The recipe on the Toll House bag makes some good cookies. But that being said, there were few recipes in her house that went "untweeked". She always preferred making her cookies with dark chocolate (dark chocolate doesn't melt quite as well as semi-sweet but it's a great taste) and just a touch of cinnamon. The resulting cookies are a thin and chewy, with great chocolate flavor and just a hint of something...different.
In a small bowl, whisk together the flour, baking soda, salt and cinnamon. In a large mixer bowl, beat the butter, both sugars, and vanilla until creamy. Add the eggs, 1 at a time, beating well after each addition. Gradually beat in the flour mixture until incorporated (do NOT over mix). Stir in the chocolate. Drop by rounded tablespoon onto ungreased baking sheets.
Bake on the middle rack of a 375 degree F oven for 8 to 10 minutes or until the cookies are light brown around the edges and still a bit soft in the middle (do NOT over bake). Remove from the oven and allow cookies to cool on the baking sheets for at least 2 minutes before removing to wire racks to cool completely. Makes about 4 dozen cookies (5 dozen if you add a cup of chopped nuts in with the chocolate).
(1) Use butter, not margarine, It DOES make a difference. And, yes you can use butter flavored Crisco but in a word (OK, two words) HYDROGENATED OILS… Butter, at least, is a natural product and in moderation won't hurt you.
(2) Do NOT use imitation vanilla.
