This simple apple salad got its name from the luxurious Waldorf-Astoria Hotel in New York. Invented in 1896 not by a chef but by the maître d'hôtel Oscar Tschirky, the Waldorf salad was an instant success. As often happens, many variations evolved—some with raisins, some with chopped nuts, some with red seedless grapes.
SALAD:
Cut apples in quarters, and remove cores; cut quarters into thin slices, then slender strips. Sprinkle with lemon juice (to prevent browning).
Cut celery in slender lengthwise strip; hold together and cut crosswise in 1/2-inch lengths. Add to apples and toss together. Cover and chill.
Just before serving time, add nuts and combined mayonnaise and boiled salad dressing to mixture, and toss lightly to distribute dressing.
Pile into crisp lettuce cups o individual salad plates.
BOILED DRESSING:
Beat eggs until light in top of double boiler.
Mix dry ingredients together and blend thoroughly with eggs.
Gradually add vinegar and cook over boiling water, stirring constantly until mixture thickens.
Remove from heat and stir in butter, evaporated milk, and pepper.
Cool; then store in cover jar in refrigerator.
Makes about 1-1/2 cups.
NOTE:
Evaporated milk makes dressing smooth and velvety and less apt to curdle than cream.
