Wonderful twist on traditional Chicken Salad. Serve on a croissant or mini rolls for a nice brunch option.
Poach chicken breasts in chicken broth for about 20 minutes.
Remove chicken and discard broth.
Shred Chicken and place in a mixing bowl.
Add sour cream, mayonnaise, dijon, green onions, and tarragon. Stir until mixed. Add parsley and seasoned pepper to taste.
Add grapes and walnuts. Stir gently.
