A colourful side dish that complements any meat.
In a saucepan, cook fusilli in lightly salted boiling water until tender but firm. Meanwhile, in a large skillet, heat the oil; add mushrooms and cook over medium heat for 1 minute. Add onions and red pepper to pan, along with oregano, and cook 2 minutes more. Remove from heat.
Add well-drained pasta, vinegar, cheese and pepper. Toss well.
You can use 2 cans of sliced mushrooms in place of the fresh mushrooms.
