Luscious and lemony; molten and moist; pudding and cake - this warm dessert has it all. There's no need to reheat leftovers - this cake is also delicious as a cold treat. The lemon filling transforms from saucy and gooey to thick and custard-like. Yummy!

"I made this cake last night with a couple of tweaks...I only had 2 small pkgs of lemon pudding so I also used 1 sm pkg of vanilla as well. I did use yellow cake mix and drizzled w/ a lemon glaze after cooling. It was done after only 40 mins. The top came out with cracks on it but my husband nor I mind at all. It is delicious, especially warm so the pudding loosens up. I will definitely make this again...with the correct amount of all lemon pudding."

Ingredients

1 package Yellow cake mix; (2 layer size)
2 cups Cold milk
1/4 cups Water
2 4-oz packages Jello lemon flavor instant pudding & pie filling
1/3 cup Sugar; granulated
2 tablespoons Sugar; powdered

Preparation

Preheat oven to 350 deg. F. Prepare cake mix as directed on package. Pour batter into greased 13 X 9 inch baking dish.

Pour milk and water into large bowl. Add dry pudding mixes and granulated sugar. Beat with wire whisk 2 min. or until well blended. Pour over cake batter in dish. Place baking dish on baking sheet to catch drippings, as mixture does bubble.

Bake 55 min. to 1 hr. or until toothpick inserted in center comes out clean. Cool in pan 20 min. (Mixture will thicken slightly as it cools.) Sprinkle with powdered sugar. Spoon onto serving dishes. Serve warm; garnish with raspberries, if desired.

Makes: 16 servings.

NOTE: I tried this with lemon cake mix and also added a lemon glaze which was very good , if you like lemon a lot.

Everyone loved it. Used a can of lemon pie filling to simplify. Made with lemon cake mix too. YUMMY!

Great with Lemon Cake Mix and I use Shirrifs Lemon Pie Filling instead.

Wonderful served warm with coffee or tea. My hubby loved urn serving it with raspberries is perfect! Goes well for Sunday brunch. Will make again. I used lemon supreme cake mix.instead

I needed a quick dessert for company. I made this very simple cake and everyone raved! Super easy and super delicious. I think next time I will try it with vanilla pudding.
