Recipe to create the spoon bread mix that used to be sold by Wilkins-Rogers Mills in Maryland

Ingredients

1 cup White corn meal; Indian Head brand
2 tablespoons Corn starch
4 teaspoons Baking powder
3/4 teaspoon Salt
2 large Eggs
3 tablespoons Corn oil
1 cup Water
2 cups Skim milk

Original recipe makes 8 Servings

Preparation

Blend dry ingredients together in mixing bowl with wire whip.

Add eggs, oil and water to dry ingredients and mix with wire whip just until uniform. Add the milk and mix with wire whip again just until the batter is uniform. Pour into a greased 1? to 2 quart casserole dish. Bake at 450F for 35-45 minutes.

Notes

Note: For a drier spoon bread you can use as little as 1/2 cup of water instead of 1 cup. The "bread" should have layers, though, with an almost custardy layer in the middle.

Note: Indian Head Yellow Corn Meal can be used instead of white.

Please make this product again all my friend's are still talking about it looking everywhere when we go places the store's would never oder enough boxes we would ask and fuss when we fine it we would buy them up miss this so much my friends all talking about smoking out of my state in Ashland Virginia used all the other kinds won't buy them again didn't like them you're truely Rhonda mills

In the note section you have for a drier spoon bread use -- cup of water instead of 1 cup. Use how much water instead of 1 cup? Mine came out too soggy!
