Ready in 4 hours

A refreshing low-cal chilled soup. Diabetic friendly and delicious.

"Very nice and super easy. I made it for a group and virtually everyone enjoyed it. I only eyeballed measurements but the only substantial change I made was to blanch the tomatoes to skin them. There was enough chewy bits without tomato skin involved. Next time I make it I'll add more citrus and possibly a little mint."

Ingredients

4 cups Fresh watermelon; cubed, seeded
3 medium Tomatoes; chopped
1 small Cucumber; peeled and diced
3 large White & Green Scallions; chopped

1/2 cup Yellow bell pepper; seeded & chopped
1/4 cup lime juice; about 3 Mexican limes
1/4 teaspoon Salt; to taste
1/2 teaspoon Black pepper; to taste
1/4 cup Cilantro; chopped

I liked a lot , my husband did not, but he is not particularly crazy about cold soups. I would make it again for myself!

Very very good. Just a hint of heat and the texture was just right.

A great summer soup with very little effort required. It is a very refreshing dish with a lovely sting from the chili. I used more watermelon then the recipe states which gave the dish a nice sweetness.
