Ready in 4 hours
A refreshing low-cal chilled soup. Diabetic friendly and delicious.
In a blender, combineingredients. Adjust flavor with lime juice, salt & pepper. Chill for at least 4 hours. Serve app 3/4 cup portions as an appetizer. Garnish with basil, parsley, or cilantro as desired. Serve with Tapas style accompaniments i.e. crostini, grilled shrimp, or other small dishes.
Each (app 3/4 cup) serving contains an estimated:
Cals: 50, FatCals: 4, TotFat: 1g
SatFat: 0g, PolyFat: 0g, MonoFat: 1g
Chol: 0mg, Na: 186mg, K: 315mg
TotCarbs: 12g, Fiber: 2g, Sugars: 4g
NetCarbs: 10g, Protein: 1.5g
This makes a grand start to a summer meal or a quick pick-me-up in the afternoon.
calgaryarky 2y agoVery nice and super easy. I made it for a group and virtually everyone enjoyed it. I only eyeballed measurements but the only substantial change I made was to blanch the tomatoes to skin them. There was enough chewy bits without tomato skin involved. Next time I make it I'll add more citrus and possibly a little mint.

Decar48 4y agoI liked a lot , my husband did not, but he is not particularly crazy about cold soups. I would make it again for myself!

osdaxxx 5y agoA great summer soup with very little effort required. It is a very refreshing dish with a lovely sting from the chili. I used more watermelon then the recipe states which gave the dish a nice sweetness.
