Watermelon Gazpacho

A refreshing low-cal chilled soup. Diabetic friendly and delicious.


4 cups Fresh watermelon; cubed, seeded
3 medium Tomatoes; chopped
1 small Cucumber; peeled and diced
3 large White & Green Scallions; chopped
1 medium Serrano chile; seeded, chopped
1/2 cup Yellow bell pepper; seeded & chopped
1/4 cup lime juice; about 3 Mexican limes
1/4 teaspoon Salt; to taste
1/2 teaspoon Black pepper; to taste
1/4 cup Cilantro; chopped

Original recipe makes 8 Servings



In a blender, combineingredients. Adjust flavor with lime juice, salt & pepper. Chill for at least 4 hours. Serve app 3/4 cup portions as an appetizer. Garnish with basil, parsley, or cilantro as desired. Serve with Tapas style accompaniments i.e. crostini, grilled shrimp, or other small dishes.

Very nice and super easy. I made it for a group and virtually everyone enjoyed it. I only eyeballed measurements but the only substantial change I made was to blanch the tomatoes to skin them. There was enough chewy bits without tomato skin involved. Next time I make it I'll add more citrus and possibly a little mint.

I liked a lot , my husband did not, but he is not particularly crazy about cold soups. I would make it again for myself!

A great summer soup with very little effort required. It is a very refreshing dish with a lovely sting from the chili. I used more watermelon then the recipe states which gave the dish a nice sweetness.
