Weight watchers mac n cheese
Cook the macaroni in simmering water for 8 minutes until tender but still with bite. Drain and set aside.
Chop the medallions of bacon into pieces and fry in calorie controlled cooking spray for 5 mins. Then set aside.
Melt the low fat spread in a pan and stir in the flour. Cook, stirring, for 2 mins then slowly whisk in the skimmed milk. Boil, whisking frequently, for 15 mins, until thickened. Once thickened stir in the cheese and season with salt, pepper and nutmeg.
Stir in the macaroni, bacon and pour into a freezer proof dish. Cool cover and freeze if not eating same day.
To serve, defrost the macaroni cheese first. Then preheat oven to 180 degrees celsius 160 for fan ovens. Blitzh the slice of weight watchers bread in food processor to make crumbs. Sprinkle over the macaroni and bake for 25 mins.
