A satisfying fill-up for the day, this scale-down version of a fry-up is a tasty treat for a Sunday morning. It combines two of my favorite comfort foods, bubble and squeak, a classic Welsh potato dish, and fried egg and bacon.
Mix potatoes, cabbage, scallion, chives, and ham in a bowl. Cook bacon in a medium skillet, leaving drippings in pan. Remove bacon and spoon potato mixture into drippings, pressing lightly into bottom of pan. Cook over medium heat 5-7 minutes. Transfer into bottom of bowl. Fry egg in remaining drippings and lay on top of bubble and squeak along with bacon and tomato slices. Season with season salt and pepper.
