Mix all of the above ingredients in a mixing bowl. Let it sit for about 20 min. or until it puffs up and bubbles
start to burst on the surface. It will actually look kind of like a wet sponge material.
Add the honey to the sponge. Mix the dry ingredients and slowly add to the mixer until it is all combined and check the dough. It should be wet and soft, but all holding together and pulling together like a soft ball. If it is a little too wet, add a little more flour and mix again until you get the consistency that you want. Do not add so much that your dough becomes really stiff or dry. Knead in the mixer for 6-10 minutes on a medium speed. I actually set the timer for this. When it is done, the dough will be much firmer than it was before and it will have a tight, stretchy feel if you pull on it a little.
Put dough in an oiled bowl and turn it to get the oil all over the surface. Cover with plastic wrap and let rise for about an hour or until it is double in size.
Place a little oil on your counter to dump the dough onto. Cut the dough into equal portions for however many loaves you are making. Then shape them into loaves and place in a greased bread pan.
Cover with a towel or plastic wrap and let it raise in a warm place. I put it on top of the oven. I let it raise for about 30 min. Then it should fill the pan pretty good. At this point, I turn on the oven and let the bread continue to raise for another 30 min. It should be quite large and tender to the touch at this point.
Bake it at 350° for 20 minutes.
