Very quick and satifying meal for cool weather. One of our family favorites. Re-heats well.

"Didn't remember to pick up the canned chilies when I got groceries, but had my heart set on trying it and made it anyways. Also didn't have the Anise, have never heard of it and didn't see it on the spice aisle. However, loved how simple it was, and the flavor was excellent. Cheese and sour cream were great add-ins. I didn't mind that it wasn't thick like a traditional chili, I was looking for something soup-like anyways, it's COLD out here this time of year, and this really hit the spot. Thank you!!"


2 tablespoon olive oil
1 large Onion
4 large Garlic
1 tablespoon Ground cumin
1 teaspoon Dried Oregano
1/2 teaspoon Anise seed
1/2 teaspoon Dried Red Pepper
1 pound Boneless chicken breasts
3 15-oz cans Cannellini Beans
1 cup Chicken broth
1 7-oz can Diced Green Chilies
1/2 cup Whipping cream
Sharp Cheddar Cheese; Grated
Fresh Cilantro; chopped

Original recipe makes 4 Servings



Chop onion and garlic. Cut up chicken in to bite size pieces. Saute onions, garlic, cumin, oregano, anise seed and dried red pepper in olive oil for 5 mins. Push aside and add chicken and saute for another 5 minutes.

Add beans (with liquid), broth, chilies and cream, simmer until chicken is tender about 10 mins.

Top with cheese and cilantro.

More like soup than stew but that's a good thing because if the ingredients and texture. Very good. I'll definitely make this again.

This was so good! I did not add the anise as I don't care for it, added some crisp bacon and of course cheese, wonderful and easy to prepare.

Gr8 recipe. My rendition came out a little more like soup than chili but the flavor was excellent!

Drain beans. Reduce for 20 min with lid off to thicken. Possible additions: green peppers, bacon, mushrooms, green onions. Very easy and delicious.
