2 Large Boneless Skinless Chicken Breasts; Poached and Shreded
2 Cans Great Northern Beans; 15.8 oz
4 Cups Chicken Broth
1 Large Red Onion; Sliced Thin
1 Pound Tomatillos; Washed and Quartered
4 Poblano Peppers; Washed and Chunked
4 Anaheim Chiles; Washed and Chunked
3 Cloves Garlic; Minced
1 Cup Marbled Cheddar Cheese; Shredded
1 Bunch Cilantro; Chopped 1/2 Cup Reserved for Garnish
Corn Tortilla Strips; For Garnish
2 Tablespoons Olive Oil
1 Tablespoon Cumin
Sour Cream; Optional

Original recipe makes 8 Servings



Sautee onions in olive oil over medium heat until softened. Add peppers and chiles and sautee for another 5 minutes. Add garlic and sautee until fragrant, about 1 minute. Add chicken broth, beans, cumin and toamatillos. Stir in shredded chicken. Simmer gently stirring occasionally for 45 minutes to an hour. Stir in cilantro 5-10 minutes prior to serving. Granish with sour cream, cheese and additional cilantro.
