This is delicious!
In a large saucepan, saute onion and garlic in oil (if you don''''t have cooked chicken on hand, you can saute 1 pound of boneless skinless chicken breast cubes along with this instead). Add chicken, beans, broth, chilies, and seasonings. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes. Remove from heat; stir in sour cream and cream, if desired for a creamy chili or leave out for a lower fat version. Serve immediately.
Can be made with dairy free products. Feel free to adjust the spices to suit your taste. This is fairly mild. If you like more zip, add more cumin, chilies, and red pepper. I also sometimes add more chicken broth.
