These cookies are perfect for St. Patrick's Day.
Preheat oven to 350 FPut butter, granulated sugar, brown sugar, eggs, and peppermint extract in a large mixing bowl. Beat with an electric mixer on medium speed 3 to 4 minutes, or until well mixed. Add food coloring and mix completely. Sift together flour and baking soda. Gradually add flour mixture to butter mixture; mix well. Stir in white chocolate chips. Drop by rounded tablespoons onto ungreased baking sheets. Bake 10 to 12 minutes, or until light golden brown. Do not overbake. Transfer to wire rack to cool.
