A white cake with a hint of mint and a dark chocolate buttercream frosting
Set oven to 350
Combine Sugar and butter until fluffy (5-mins) - set aside
In a separate bowl sift togather flour, salt and baking powder in seperate bowl
In a separate bowl combine milk, vanilla, mint and eggs
Add to butter mixute, alternating between 1/4 flour and 1/4 milk mixtures Continue this, starting with flour and ending with flour mixture
Place batter into cake pan(s) Bake for 25-35 mins or until outer edge begins to peele from the sides of the pan Cool compleatly
For Frosting:
Fill the bottom half of a double boiler until the water level is just below that of the top half. (Or fill a regular pot with 1 inch water and place a medium bowl over the pot). place tablespoon butter in pot with the chocolate (If it is in small chunks it will melt faster).
Once its melted, wait until its cool to the touch. Combine 1 2/3 sticks butter with melted chocolate until combined.
Add powdered sugar and powdered chocolate (You may add more or less of either, depending on taste).
Place Cake on cake platter (or plate) and frost. You can add a mint leaf on top for visual purposes.
