Classic white pizza flavours in a cheesy grilled sandwich - delicious!
In a small bowl, mix together ricotta, oil, garlic, basil, oregano, chili (if using), salt and freshly ground black pepper to taste. Refrigerate for at least an hour (or overnight) to allow the flavours to develop.
Lay out your bread slices and spread the ricotta mixture evenly on each piece. The mixture should coat the insides of both pieces of bread. Place the mozzarella slices evenly on one side of each sandwich. Sprinkle with Parmesan cheese and close the sandwiches by placing both cheesy insides together.
In a small bowl combine the butter and the extra garlic, mix well with a fork. Spread the outsides of the sandwiches with this mixture. Cook on both sides in a fry-pan or a sandwich grill until cheese is melted and bread is golden brown.
I sometimes add a little chicken or salami before closing the sandwiches. Sliced tomato is also a nice variation.
