2 c Whole wheat flour
1 1/4 c Water
1/2 c Applesauce
2 tb Sugar; (may use 1/4 cup for Sweeter muffins)
1/4 ts Salt; (or less)
1 ts Cinnamon
1 lg Apple; or 2 small apples, Chopped (about 1 1/2 cups)
3 ts Baking Powder

Original recipe makes 12



Combine dry ingredients in large mixing bowl. Combine water and applesauce in another bowl. Add apple to dry ingredients and mix to coat apple. Add water mixture to dry ingredients. Mixture will be somewhat thick. Spoon mixture into non-stick muffin tins sprayed with vegetable oil spray. Bake at 425 deg. F. for about 20 minutes or until lightly browned. Remove from muffin tin. You can replace the cinnamon and apple with 1 1/2 cups blueberries for blueberry muffins. Posted by Terry Frye

I added a half cup of brown sugar instead of white and crumbled some on top. I enjoy this recipe for an everyday easy breakfast that is not as bad or you.

These were bland and spongey (not moist). They are edible but probably only as a filler rather than 'a real muffin' replacement. I wouldn't bother with them again

I sprinkled a touch of brown sugar and a pinch of cinnamon on top before baking. Added a fantastic taste. Also added mini chocolate chips
