These are my favorite whoopie pies. The filling is not too sweet.
DIRECTIONS FOR PIE
Sift together flour, cocoa, baking soda, baking powder and salt.
Cream the shortening with the sugar. Beat in the egg and vanilla.
Add sifted ingredients alternately with 1 CUP MILK into a large mixing bowl. Add-in creamed ingredients.
Drop by tsp. on cookie sheet. Bake 350 for 8-10 minutes.
DIRECTIONS FOR FILLING
Mix 1/2 cup milk and 2 tablespoons flour together. Bring to boil till batter is thick, stir constantly. LET COOL.
Cream together 1/2 cup sugar and 1/2 cup Crisco.
Beat together flour and sugar mixture, beat until sugar is dissolved. (Add marshmallow if desired and vanilla).
Place creamed FILLING onto one cookie and then place another cookie on top.
