Filled with a rich mushroom stuffing and topped with crumbs, turkey tenderloins are a great way to enjoy the noble holiday bird without lots of leftovers.
In large nonstick skillet, heat olive oil over medium-high heat. Add mushrooms, shallot, garlic, herbes de Provence, salt and pepper; cook for 1 minute. Stir in sherry; cook stirring occasionally until liquid evaporates, about 3-4 minutes. Cool completely; stir in cheese.
To make pickets, insert tip of sharp knife into thicker side of each tenderloin, about 1/2 inch from one end. Create pocket by slicing to within about 1/4 inch of the other side. Stuff half of the mushroom mixture in pocket of each tenderloin, distributing it evenly throughout pocket. Gently press to close pocket. Place in 9 x 13-inch baking dish that has been lightly coated with non-stick cooking spray; set aside.
For topping: in small bowl, combine bread crumbs, parsley, and olive oil. Place half of the crumb mixture over each tenderloin. Bake in 350 degree oven until internal temp is 165; about 45-50 minutes.
