A great whole grain dish that bakes while you prepare other foods
Preheat oven to 375 degrees. In a large non-stick pan, saute olive oil over medium heat. Add all ingredients except broth and water. Cook about 5 minutes, stirring constantly until onions soften. Do not allow garlic or nuts to brown. Meanwhile bring stock and water to a boil. Transfer rice mixture to 2 quart baking dish. Pour stock and water over rice mixture in baking dish. Cover with foil and bake 1 hour.
