Venison pie
Marinate the venison in buttermilk in the refrigerater for 1 day. Wipe the meat clean and discard the buttermilk. Cut in 25mm blocks.
Fry the bacon in butter. Remove. Fry the chopped onion in the same pot until soft and translucent with the garlic. Remove. Add a little oil and fry the lamb shanks in the same pot until golden brown. Cover the venison pieces with flour and fry until golden. Add the lamb shanks, bacon and onion and season with salt and pepper. Add the whole onion with cloves in as well as the bay leaves, coriander, stock and red wine. Bring to the boil, reduce the temperature, cover and simmer for 3-4 hours or until the meat is soft and falls off the bone. Allow to cool, then remove the bones and whole onion and shred the meat. Simmer the sauce until thick. Allow to cool.
Add some of the sauce as desired to the meat and spoon the meat into a large pie dish and cover with the pastry. Prick the pastry with a fork and paint with the beaten egg. Bake for 15 minutes at 230°C, reduce the temperature to 180°C, and bake for another 30-35 min.
