Combine all ingredients but beef for marniade and place in a bag to marinate at least 6 hours or overnight. Remove meat and discard marinade. Place meat in a shallow roasting pan fat side up and insert meat thermometer into center of meat. Bake in 325? convection oven on rack #2 offset for 1.75 to 2.25 hours for medium rare (145?), or for 2-2.75 hours for medium (160?). If necessary, cover meat with foil the last 30 minutes to prevent over browning. Let meat stand covered for 15 minutes before carving.
