Simmer raisins in just enough water to cover them, about five minutes. When soft, take off heat and save 5 TBSP liquid in a separate cup.
Add I tsp baking soda - will foam - this gives flavor and allows cookies to rise.
Cream sugars with shortening
Beat in eggs
Drain the rest of the raisins and add to the batter.
Add soda water (from off raisins) to the batter
add rest of ingredients in order listed. Alternating 1 cup flour with 1 cup oatmeal - repeat
Place cookie dough onto greased cookie sheet by tablespoon
Bake 10-12 minutes until golden.
Place cookies on paper towels to cool.
Store in sealed container
These are great cookies - even if you don't like oatmeal cookies. Follow exactly and make no substitutions. Do not try to double.
