Yuca al ajillo (aka yuca al mojo) is my favorite side dish for roasted pork (lechón asado) or roasted chicken (pollo asado).
Hierve la yuca con agua y sal.
Prepara tremenda sambumbia con la cebolla, el ajo, la hoja de laurel, aceitemde oliva, vinagre, cubito de pollo, ketchup, pique y 1 taza del agua donde se hirvio la yuca.
Deja hervir todomesto por unos minutos.
Ahora métele la yuca y deja hervir otro ratito hasta que absorba el saborcito riiico.
