Yummy vegetable soup!


1.0 ea Onion; chopped
2.0 ea Carrot; cubed
2.0 sticks Celery; cubed
1.0 ea Parsnip; cubed
1.0 ea Swede; cubed
1.0 ea Zucchini; cubed
1.0 small Squash; cubed
1.0 medium Potato; cubed
1.0 ea Bay leaf
1182.9 ml Vegetable stock
14.8 ml Tomato paste; optional
354.9 ml Rice

Original recipe makes 6



1. chop onion and put in large pot, put pot on low heat and allow onions to soften slightly

2. cube remaining vegetables and add to pot

3. If adding tomato paste. add this now

4. Cover with vegetable stock and add rice

5. bring to boil, once boiling turn heat down to a simmer

6. Cook for 1.5 hours or until vegetables and rice is cooked!
