I took 4 years of award winning Colorado green chilis and turned them into this one recipe. The recipe may seem simple but this is amazing green chili!
Brown cubed or ground pork in 3 Tbs. Olive Oil, drain and set aside
Sautee onion, garlic and celery in 2 Tbs. Olive Oil with ½ tsp salt until translucent. Add in tomato paste and allow to stick to the bottom of the pan. Use the salsa verde to deglaze the pan.
Add Chicken broth, peppers, tomatillos, green chilis, pork and seasonings
Simmer 3 hours
Season with Salt and Pepper
Garnish with cheddar cheese and sour cream.
Serve with warm tortillas
You can have a lot of fun with this recipe once you get a feel for it. I love getting fun chilis at farmers markets in the summer. You can add some fresh tomatoes and make it pink. I sometimes add the chorizo seasoning and italian sausage seasoning to make it more complex. This freezes for months so you can make a huge batch and always have some waiting for you. I have tried using different forms of pork as well. Spicy sausage?
My favorite thing to is to put a hot pork tamale in the bottom of the bowl and then smother it with the chili.
