Light tasting even with all that bacon

"This literally couldn't be easier. I add whatever veg is in the fridge. I've made it with broccoli, peas and this evening I even threw in a bit of cauliflower I wanted to use up. I also add a bit of oregano or chilli sometimes just to mix it up. My kids love it and it's so easy!"

Ingredients

Are you making this? 
12 ounce Pasta; rotini or bowtie
1/2 pound Bacon; chopped
2 tablespoon Bacon grease; reserved
1 medium Onion; chopped
6 cloves Garlic; minced
3 medium Zucchini; halved and sliced
1/2 teaspoon Salt
3 tablespoon Lemon juice
1/4 cup Parmesan cheese; grated

Original recipe makes 6 Servings

Servings  

Preparation

- Cook bacon until crisp

- Remove and discard all but 2 T of grease

- Saute onion on medium high in drippings until golden brown.

- Add zucchini, garlic and salt, cook until tender

- Boil pasta

- Add pasta to zucchini mixture

- Add lemon juice and bacon and toss

- Sprinkle with cheese

Very good dish. I am always on the lookout for put together meals without using box mixes which contain a lot of salt/sodium. This is a great dish and I'm sure I'll be making it often and using other veggies as others have mentioned. Very delicious, quick and easy.

Very easy and tasty. I think next time I make it I'll grab some other garden fresh vegs to throw it in also.
