Ready in 45 minutes
Preheat oven to 325.
Grease bottoms only of 2 - 9x5x3 loaf pans.
Blend all ingredients together on low for about 1 minute, scraping sides of the bowl constantly.
Then, beat on medium for about 1 minute. Don't over mix.
Pour evenly into pans and bake for approximately 50-60 minutes or until toothpick inserted in center comes out clean.
Cool on rack for about 10 minutes then remove from pan.
*If you use self rising flour, omit salt, soda, and baking powder.

KitchenHater 1y agoI make this almost once a month for my kids' breakfast. I add about 2/3 cup of unsweetened cocoa powder to hide the zucchini, but it tastes great without it!

ees55 2y agoReally good. I added walnuts for some crunch and had to bake the bread for a bit longer than the instructions suggested (using a metal loaf pan). It turned out pretty moist on the instead with a nice amount of crunchy crust on the outside.
EyesOpenWide 2y agoGreat Recipe! I loved it! Kids loved it...even my skeptical husband. He took it to work and it was a huge hit. I had some massive zucchini from my garden to use and this was the perfect solution! 2 zucchini made 3 batches and 9 loaves of this bread. Fabulous recipe I will be using over and over!
