"Made as directed. Did not peel my zucchini beforehand bc I like the lil green flecks in the bread. For sone reason I have an 8.5x4.5 loaf pan and a 9x5 loaf pan. The 8.5 cooked perfectly in 55 min. The 9 in took another 20 min after I cranked the heat up to 350. Came out moist and delicious. This will be my stand by zucchini bread. And one more thing. I used a very large zucchini about 3 inches thick at it's thickest and about a foot long and had plenty. Even too much. I still had about 2 inches of zucchini left. "- Love7721
Preheat oven to 325.
Grease bottoms only of 2 - 9x5x3 loaf pans.
Blend all ingredients together on low for about 1 minute, scraping sides of the bowl constantly.
Then, beat on medium for about 1 minute. Don't over mix.
Pour evenly into pans and bake for approximately 50-60 minutes or until toothpick inserted in center comes out clean.
Cool on rack for about 10 minutes then remove from pan.
*If you use self rising flour, omit salt, soda, and baking powder.

KitchenHater 3 months agoI make this almost once a month for my kids' breakfast. I add about 2/3 cup of unsweetened cocoa powder to hide the zucchini, but it tastes great without it!

littlel43082 10 months agoI cut the sugar down to 2 cup and the oil down to 1 cup. It was very good.

ees55 1 year agoReally good. I added walnuts for some crunch and had to bake the bread for a bit longer than the instructions suggested (using a metal loaf pan). It turned out pretty moist on the instead with a nice amount of crunchy crust on the outside.

I had some massive zucchini from my garden to use and this was the perfect solution! 2 zucchini made 3 batches and 9 loaves of this bread. Fabulous recipe I will be using over and over!

mandamontana7 1 year agoAwesome recipe! Made it with zucchini from the garden and it was wonderful. I used a cake pan and it was just right. Very moist!
