Zucchini Bread

3 Egg
1 1/2 cup Sugar
2/3 cup Vegetable oil
1 tbsp Vanilla
2 cup Zucchini
2 cup Flour
1 tsp Cinnamon
2 tsp Baking soda
1/4 tsp Baking Powder
1 tsp Salt
1 cup Pecan

Original recipe makes 2



Beat eggs and sugar together until creamy. Then add the rest of the ingredients. Bake at 350-375? until done - on the order of 45 min to an hour. Check with a butter knife. It is done when no crumbs stick to the knife. Makes 2 small loaves or 1 big loaf.

This was a good way to use up our Zucchini Bread. Me and my 6 year old daughter made it, making it a good recipe for children. Although I only got one pan of bread, it was worth it, very moist. My cooking time was about 75 minutes. I usually add chocolate chips instead of nuts of any sort, and will try THIS recipe with the chocolate chips next time. Chocolate chips are usually for taste AND to make the cake moist, though this cake doesn't need to be moist.
