A great way to use up some of those zucchini from your garden. It tastes remarkably like pizza.
Preheat oven to 350 degrees F. Combine everything in a large bowl but the eggs and the oil. Beat the eggs and add them to the oil in a small bowl. Stir to mix. Add the eggs and oil to the other ingredients and stir until blended. Spread evenly into a lightly greased 9" x 13" pan. Bake for 30 - 35 minutes at 350 degrees F. Cut into squares and serve hot or cold. Makes 12 large squares. Tastes a lot like pizza.
