Zucchini Vichyssoise
In large pot, heat butter and oil, add leeks and sauté medium-low for 5 minutes. Add potatoes, zucchini, stock, salt and pepper. Bring to boil, then simmer for 30 minutes. Cool then process through food mill or blender until smooth. Add cream and season to taste. Serve hot or cold, garnish this chives or zucchini.
