Excellent in every sense, generous serving casserole-do not hesitate a moment-a recipe box keeper! Can even make rice a day/two ahead to save time then just grab it to assemble casserole. For cheese, we substituted Tostito Salsa Con Queso cheese/in jar which added a very subtle wonderful flavor (was on sale vs Cheese Whiz which is pricey). With leftovers, we'll add chicken chunks and tomatoes, then wrap in flour tortillas. So many possibilities w/this casserole, can easily adapt to your preferences.
