It's almost Easter and the chickens are laying a lot of eggs. A great way to use some of those Easter eggs the kids found.

Egg Salad Ingredients

7 large Eggs hard boiled (10 minutes), peeled, and cooled1/4 Onion finely chopped
3 tablespoon Mayonnaise 1/8 teaspoon Garlic powder
1 tablespoon Mustard 1 medium Tomato slice, remove seeds and pulp, then chop
Salt to taste1/2 cup Bread and butter pickles chopped
Pepper to taste Paprika sprinkled on top - optional
1/8 teaspoon Celery salt

Instructions for Egg Salad

Roughly chop the eggs in a mixing bowl. Add the other ingredients down to the paprika. Mix gently until it's all well blended. Add paprika, if desired, cover and refrigerate for one hour. Serve on your favorite bread to make a sandwich or as a side dish as desired.
