Broccoli and Cheese Potato Soup Ingredients

1 large Onion chopped1 1/2 cups Red potatoes cubed
4 teaspoon Vegetable oil 1/4 teaspoon Salt
3 tablespoon All purpose flour 1/8 teaspoon Red pepper ground
2 cups Broccoli flowerets1 cup Cheddar shredded
2 cups Milk 1 small Tomato seeded and chopped
14 1/2 ounce Chicken bouillon 1/3 cup Sour cream

Instructions for Broccoli and Cheese Potato Soup

In a large saucepan cook onion in hot oil until tender. Sprinkle flour over onion and stir to coat. Add the broccoli, milk, broth, potatoes, salt, and red pepper. Cook and stir until thickened and bubbly; reduce heat. Simmer, covered for 10 - 12 minutes or until vegetables are just tender, stirring occasionally. Add cheddar cheese, tomato, and sour cream; stir until cheese melts.
