Appetizers are an important part of any home cook's repertoire. Signaling the meal to follow, they are often bite-size dishes either matching or closely complementary the cuisine of the meal. For instance, a Mexican meal might start with tortilla chips and guacamole, while a Provencal meal might begin with anchovies or tapenade and bread. Some appetizers are passed around at a party and are designated hors d'oeuvres. Or appetizers can be casually set out for guest's enjoyment buffet-style while the meal is being prepared.
